Bunches on earlier ripening varieties have already begun to transition into veraison. During veraison, grapes undergo several changes: the berries soften, accumulate sugars, and change color from deep green to translucent green. This stage also marks a reduction in acidity and an increase in sweetness, making it pivotal for the quality and flavor profile of raisins.

Given warm temperatures in February and March, vineyards range at least two to three weeks ahead of standard crop development. Bunches have already bloomed, and since grape vines are self-pollinating, no bees are required! A healthy bloom ensures that the grapevine produces a sufficient number of flowers, which can then be pollinated and develop into berries.
