Rainbow Detox Salad

My healthy eating journey began when I was pregnant with my first child. It all started with raisins.


At one of my prenatal doctor appointments, the nurse told me I was borderline anemic. It wasn’t anything to be concerned about, she told me, but of course I was concerned. As a first-time parent, I didn’t want anything getting in the way of a healthy baby.


The nurse told me all I needed to do was put a handful of raisins into my cereal each morning. She said this would give me the iron boost I needed.


Sure enough, she was right. I dutifully scooped some raisins into my morning cereal each day, and my iron was back to normal at my next prenatal appointment.


This experience helped me to connect the food I was eating with my overall well-being. A dozen years have passed since that conversation with the nurse, and I’ve become even more attuned to the impact that food has on my health.




As we look at resolutions for the new year, it’s a good idea to reset our bodies after all the indulgences of the holiday season. The easiest way to do that is to eat lots and lots of produce. This is a simple, effective way to recharge our systems and strengthen our immunity.


This rainbow detox salad is a delicious combination of fruit, vegetables, and plain yogurt. It’s both savory and sweet, with the golden raisins and apples adding just the right contrast to the savory ingredients. This is an upgrade to the traditional Waldorf salad, which is typically made with a mayonnaise-based dressing.


I like to serve this salad alongside my family’s breakfast or lunch to boost their nutrient intake. It’s full of flavor and texture, and children love the creamy yogurt dressing.




Rainbow Detox Salad 

Makes: 5 cups (10 servings)



2 celery stalks, chopped

1 orange pepper, chopped

2 medium red apples, cored and chopped

½ cup golden raisins

¼ cup diced almonds or walnuts

½ cup plain whole milk yogurt

2 tsp. lemon juice

1 tsp. honey

¼ tsp. salt

1 tsp. diced chives



Chop the celery, pepper, and apples, and place them in a large bowl. Add the raisins and nuts to the bowl.

In a separate medium bowl, stir together the yogurt, lemon juice, honey, and salt. Pour the dressing over the apple mixture and stir to coat evenly.

Sprinkle the salad with diced chives and serve.
