The summer travel season can make it difficult to keep up with healthy eating. Road trips often include quick stops for processed food to keep everyone happy in the car. But every time I find myself perusing the aisles in a gas station convenience shop, I wish I had planned ahead.
With just a little advanced preparation, healthy food can be part of a family vacation without much hassle.
These easy Cinnamon Raisin Snack Bars make a delicious on-the-go snack or breakfast. My family travels all over the Northeast during the summer, and I often make different variations of these bars for our first day on the road. We inevitably end up eating lots of extra treats on vacation, so I feel like every ounce of nourishing food I can add to our travel day is worth the effort.
It takes just 10 minutes to put together the ingredients for this recipe, and these bars are packed with nutrition. Oats are a hearty whole grain, and they satisfy hunger for a long time. Raisins are full of fiber, iron, and antioxidants. They’re a pantry staple in my house, so I always have some on hand for adding natural sweetness to easy recipes like this one.
This recipe is a great one for getting kids involved in the kitchen. Younger children can help measure and stir together the ingredients, and older kids can make this entire recipe by themselves.
Plan ahead to bake this healthy snack the next time you travel. These taste so much better than the packaged snacks at the gas station, and they’re much more affordable. Cinnamon Raisin Snack Bars
Makes: 12 bars
10 minutes prep time
30 minutes bake time
⅓ cup milk
½ cup applesauce
2/3 cup pure maple syrup
1 tsp. vanilla extract
3 cups rolled oats
2 tsp. baking powder
1½ tsp. cinnamon
½ tsp. salt
1 cup Sun Maid raisins
1 cup chopped walnuts, optional
- Preheat the oven to 375 degrees and grease a 9 x 13 inch baking pan with butter or oil.
- In a large bowl, stir together the eggs, milk, applesauce, maple syrup, and vanilla extract.
- In a separate medium bowl, stir together the oats, baking powder, cinnamon, and salt.
- Add the dry ingredients to the wet ingredients and stir until combined.
- Stir in the raisins (and walnuts, if using). Transfer the mixture to the prepared baking dish. Use a spatula to press the mixture evenly into the pan.
- Bake for 30 minutes, or until the bars are set and the edges are beginning to turn brown. Cool on a rack for a few minutes before cutting into bars. Once they’re completely cool, store the bars in an airtight container for up to three days. These bars can also be frozen for several months.
