Simple to make, healthy and delicious, these are my new go-to snack bars for my family.

This is what I hear All. Day. Long.
As a mom of 3 busy little boys, I am looking for new, delicious snack ideas. And mainly because my little guys are always hungry. I never knew that little people could eat so much. I am almost afraid to see how much they eat when they are teenagers. And that isn’t that far away…
I also don’t want my kids eating junk all day. I am a nutritionist that believes in eating in moderation, but I love to create nourishing snacks for my kids that I can feel good about.
I am very lucky that my kids like to try different foods (due to their love of eating!) And they actually get excited when I make new snacks. This was the first recipe I created after my surgery and I’ve already made these bars 3 times in 10 days. That’s how much they loved these. And I can’t forget how much my husband and I loved them too.
These bars can be customized to whatever you and your family likes. You can add some other dried fruits and nuts, chocolate chips, whatever they like. But first, make them THIS way because they really are that good.
Almond Oatmeal Raisin Bars
Makes 8 bars
- 1 cup gluten-free oats
- 1 tablespoon cinnamon
- 1 teaspoon baking powder
- ¼ cup ground flax seed
- ½ cup chopped almonds
- ½ cup Sun Maid raisins
- 1/3 cup brown rice syrup
- 1/3 cup 100% maple syrup
- ½ cup almond butter
- 1 teaspoon vanilla
- Preheat oven to 350 degrees.
- Place raisins in a small bowl with water and allow to sit for 10 minutes.
- Line an 8 x 8 baking dish with parchment paper. Set aside.
- Combine the oats, cinnamon, baking powder, flax, almond and raisins in a medium bowl. Mix well.
- In a small bowl, mix together the brown rice syrup, maple syrup, almond butter and vanilla until thoroughly combined.
- Add the syrup mixture to the dry mixture and stir well.
- Pour into prepared baking pan and press down until even.
- Bake in preheated oven for 20-25 minutes until toothpick in the center comes out clean.
