Raisin White Chocolate Cookies
In 2016, sixty members of the International Nut and Dried Fruit Congress (INC) visited Sun-Maid as part of the California Nut and Dried Fruit tour, inspiring this recipe.
Makes 2 dozen cookies
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 1/3 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup rolled oats
- 1 cup white chocolate chips
- 1/2 cup Sun-Maid Natural Raisins
PREHEAT oven to 350°F.
BEAT butter, granulated sugar and brown sugar in a bowl with an electric mixer on medium speed until fluffy. Beat in egg and vanilla.
ADD flour, baking soda, cinnamon and salt; beat well. Mix in oats.
STIR in the white chocolate chips and raisins.
SCOOP rounded tablespoonfuls of dough onto parchment-lined baking sheets about 2 inches apart.
BAKE until the cookies are golden on the bottom, 12 to 15 minutes. Cool on the baking sheets 10 minutes, then transfer to racks to cool completely.
