Raisin Oatmeal

Raisin Oatmeal
Yield: 4 servings


  • 2 cups milk
  • 1 1/2 cups water
  • 1/4 teaspoon salt, if desired
  • 2 cups old fashioned oats
  • 3/4 cup Sun-Maid Raisins
  • 3 tablespoons brown sugar, optional
  • 1/2 teaspoon ground cinnamon, optional
  • 1/4 to 1/2 cup toasted chopped pecans, optional
  • 1/4 to 1/2 cup toasted coconut, optional

  • In 3-quart saucepan (preferably nonstick), combine milk, water, salt, oats and raisins. Cook over medium heat until mixture boils. Reduce heat to low. Cover; cook 5 minutes.

    If desired, in small bowl, mix brown sugar and cinnamon. Spoon raisin oatmeal into 4 bowls. Sprinkle with brown sugar mixture. Top with 1 to 2 tablespoons pecans and coconut. If desired, serve with additional milk or half-and-half.

    Tip: To toast pecans, place in small dry skillet. Cook over medium heat 5 minutes or until fragrant, stirring and shaking occasionally. Remove from skillet immediately. To toast coconut, place in small dry skillet. Cook over medium-low heat 4 to 5 minutes or until golden brown, stirring frequently. Remove from skillet immediately.
