Raisin Apple Cinnamon Cake

Ingredients

  • 2 eggs
  • 2 cups sugar
  • 3/4 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1-1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 4 cups (4 to 6 medium) peeled, chopped tart apples
  • 1 cup chopped walnuts
  • 1 cup Sun-Maid Natural Raisins
  • Directions:
    HEAT oven to 350° F.
    GREASE a 13x9-inch pan.
    COMBINE eggs, sugar, oil and vanilla; beat until light and fluffy.
    COMBINE flour, cinnamon, baking soda and salt.
    ADD to oil mixture; mix well.
    STIR in apples, walnuts and raisins.
    SPREAD batter in greased pan.
    BAKE for 40 to 45 minutes or until toothpick inserted in center comes out clean.
    COOL in pan on wire rack.
    SERVE with vanilla ice cream, if desired.

    Makes 16 servings.
