Old-Fashioned Rice Custard
The flavor and convenience of this nostalgic recipe makes for a modern day classic.
- 3 eggs, slightly beaten
- 1-1/2 cups milk
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3/4 cup cooked rice
- 2/3 cup Sun-Maid Natural Raisins
- 1/4 teaspoon nutmeg (optional)
- 1 tablespoon butter or margarine
HEAT oven to 350° F.
GREASE a 1-quart baking dish.
COMBINE eggs, milk, sugar, vanilla and salt; blend well.
STIR in rice and raisins.
POUR into greased baking dish.
SET baking dish in pan with enough hot water to come halfway up sides of dish.
BAKE, uncovered for 30 minutes.
STIR mixture to bring rice to the top.
SPRINKLE with nutmeg and dot with butter.
RETURN to oven; bake an additional 30 to 40 minutes or until knife inserted in center comes out clean.
