Granny's Layered Spice Cake
Remember Grandmaâ€™s homemade raisin cake? Even if you donâ€™t, bake up some memories today.
- 1/2 cup shortening
- 1 cup sugar
- 3/4 cup firmly packed brown sugar
- 3 eggs
- 2-1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1-1/3 cups buttermilk
- 1 cup Sun-Maid Natural Raisins, chopped
- 1/3 cup butter or margarine, softened
- 4 cups powdered sugar
- 2 teaspoons vanilla extract
- 2 to 3 tablespoons milk
GREASE and flour two 8-inch round cake pans.
COMBINE shortening, sugar, brown sugar and eggs; beat until light and fluffy.
COMBINE flour, baking powder, baking soda, cinnamon, allspice, cloves, nutmeg and salt; blend into shortening mixture alternately with buttermilk.
STIR in raisins.
POUR batter into greased and floured pans.
BAKE for 40 to 45 minutes or until toothpick inserted in center comes out clean.
COOL 10 minutes.
REMOVE from pans and cool on wire racks.
COMBINE all frosting ingredients; blend until smooth.
FILL and frost cake.
Make 12 servings.
