Breakfast Egg and Cheese Roll-Up


  • 4 Sun-Maid Raisin tortillas

  • Egg Mixture:

  • 4 large eggs
  • 1/3 cup diced peppers
  • 1/4 cup diced red onion
  • 2 tablespoons (1-ounce) cream cheese, cut into small pieces
  • salt and pepper to taste

  • 1 tablespoon olive oil
  • 1/4 cup shredded Colby jack cheese
  • 1/4 cup guacamole

  • In large bowl, with wire whisk, stir together all egg mixture ingredients until well mixed.
    In large non stick skilled place olive oil; heat over medium heat. Add egg mixture. Cook, turning egg mixture occasionally, until eggs are cooked through (3 to 4 minutes).
    Place about 1/4 of cooked egg mixture on 1/2 of tortilla. Sprinkle with shredded cheese; fold over tortilla and serve with 1 tablespoon guacamole.

    Refrigerate leftovers.

    Makes 4 roll-ups.
