Mediterranean Spinach and Rice

  • 1 cup long grain white rice
  • 1 tablespoon olive oil
  • 4 cloves finely chopped garlic
  • 1/2 cup Sun-Maid Natural Raisins
  • 1/2 cup Sun-Maid Golden Raisins
  • 1 pound fresh spinach leaves, washed, dried and coarsely chopped
  • 1 medium red bell pepper thinly sliced
  • 1/2 cup crumbled feta
  • 1/2 teaspoon pepper
  • salt
  • Directions:
    COOK rice according to package directions, omitting oil and salt.
    a large skillet or wok over medium heat.
    oil and garlic.
    until garlic is light golden brown, about 2 minutes.
    raisins and cook for 1 minute.
    spinach 1/3 at a time, tossing quickly just until each addition begins to wilt.
    cooked rice, red bell pepper, feta cheese and pepper.
    briefly to combine and season with salt to taste.
    immediately or at room temperature.

    Makes 6 servings.
