Cesar's Rice Pudding
- 1 cup medium or long rice
- 1 cinnamon stick
- 1 tablespoon lemon, orange or lime zest
- Pinch of salt
- 4 cups milk
- 1/4 cup granulated sugar
- 1/2 cup Sun-Maid Natural Raisins
- 1 tablespoon vanilla extract
- Ground cinnamon
COMBINE 1 cup water, rice, cinnamon, zest and salt in a deep saucepan with lid. Bring to a boil over medium heat. Reduce heat, cover and simmer 2 to 3 minutes until water is absorbed.
STIR milk and sugar into rice. Simmer over medium-low heat, stirring constantly until rice is soft and milk is thickened and creamy, about 20 minutes, depending on type of rice.
STIR in raisins and vanilla. Cook 2 minutes. Remove from heat and let cool 30 minutes (pudding will thicken). Spoon into dessert bowls. Serve warm or chilled sprinkled with cinnamon if desired.
Makes about 4 cups.
