Ingredients
Salad:
1 cup shredded carrots
1 cup shredded zucchini
1 cup shredded jicama*
1/2 cup Sun-Maid Natural Raisins
Dressing:
3 tablespoons light sour cream
2 tablespoons apple juice
1 tablespoon cider vinegar
2 teaspoons honey
1/2 teaspoon grated fresh ginger root
salt and pepper
Directions: COMBINE all salad ingredients; blend well. COMBINE all dressing ingredients; blend well. POUR dressing over salad. ADD salt and pepper to taste. TOSS and serve.
Makes 4 servings.
*Jicama is a crunchy root vegetable found in the supermarket produce department. Remove the skin with a vegetable peeler.
