 Spicy Tandoori chicken or lamb kabobs are a perfect complement for this sweet and savory rice.
Ingredients
3/4 cup basmati rice
1/4 cup slcied almonds
2 teaspoons curry powder
1 medium Granny Smith apple, peeled and chopped
1/2 cup Sun-Maid Natural Raisins
1/4 cup sliced green onion
Directions: COOK rice according to package directions omitting oil and salt. HEAT a heavy skillet or saucepan over medium heat. TOAST almonds shaking pan frequently until almonds are light golden brown. ADD curry powder. COOK, shaking pan until curry is fragrant, 1 to 2 minutes. ADD apple, raisins and green onion. STIR gently until mixture is heated through and coated with curry powder. REMOVE from heat. STIR in hot cooked rice. SEASON with salt to taste.
