 Satay is an Indonesian or Malaysian dish. Its distinguishing characteristic is the spicy peanut dressing.
Ingredients
Salad:
2 tablespoons soy sauce
2 tablespoons vegetable oil
1 tablespoon sugar
1/4 teaspoon garlic powder
4 chicken breast halves, skinned and boned
4 cups assorted salad greens, torn in pieces and chilled
1 cup Sun-Maid Golden Raisins or Natural Raisins
1/4 cup sliced green onions
Dressing:
1/2 cup peanut butter
1/4 cup water
2 tablespoons soy sauce
2 tablespoons cider vinegar
1 tablespoon sugar
1/4 teaspoon ginger
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
Directions:
COMBINE soy sauce, oil, sugar and garlic powder; blend well.
POUR over chicken; coat well.
COVER;
REFRIGERATE at least 30 minutes or up to 2 hours.
BROIL chicken breasts 4-inches from heat for 5 minutes.
TURN chicken; brush with soy sauce mixture.
BROIL an additional 5 minutes or until chicken is tender.
COMBINE all dressing ingredients; blend well.
To serve, PLACE lettuce on 4 individual plates.
CUT chicken breasts into 1/2-inch slices; place on lettuce.
DRIZZLE each salad with dressing and top with raisins and green onions.
SERVE immediately.
