- 1 cup rolled oats
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup melted butter or margarine
- 1/2 cup firmly packed brown sugar
- 1 beaten egg
- 1/2 teaspoon grated orange peel
- 1 cup Sun-Maid Natural Raisins
HEAT oven to 350° F.
GREASE or line 12 (2
3/4-inch) muffin cups with paper baking cups.
COMBINE oats and
buttermilk; let stand.
baking powder, cinnamon, baking soda and salt; mix well.
COMBINE butter ,
brown sugar, egg and orange peel.
STIR into oat
mixture; mix well.
ADD to flour
mixture; stir just until dry ingredients are moistened.
FOLD in raisins.
SPOON batter into
prepared muffin cups.
350° F for 25 to 30 minutes or until toothpick inserted in center comes out
Makes 12 muffins.
MICROWAVE DIRECTIONS: Prepare recipe as above. Line microwave muffin
pan with paper baking cups. Fill cups with 1/4 cup batter. Sprinkle with
cinnamon sugar, if desired. Microwave at HIGH (100%) for 3 to 3-1/2 minutes for
6 muffins; rotate pan halfway through. Repeat with remaining batter.
